Blitz all your ingredients together (except the dark chocolate).
Taste the mixture to make sure it's to your liking and adjust as needed.
Roll into balls and put in the fridge for 20 minutes.
Melt the dark chocolate in a Pyrex bowl over a saucepan of hot water.
Dip the balls into the melted chocolate and ensure they are evenly coated. You can sprinkle some extra dried fruit or desiccated coconut on the top to make them look pretty.
Once the chocolate has set, store in an airtight container. Keep refrigerated or store in the freezer.
